@ManicMaurice Hi, the plate that attaches to your camera has a dovetail on it, which fits in a grove on the head. I didn't go with the lever lock, because the screw head, while slightly slower in use, exerts more force on the plate.
Aside from that, there are "safety stops" on the plates too.

If you go with the lever style plate, I would think the chance of an accidental release is greater than the screw style, but in either case, and especially in the case of the screw style, you would be hard pressed to accidentally unlock it.
If you bumped into it hard enough to release it, I'd be more concerned about the tripod falling over than the jaws releasing.
